Betchay's Torta de Cebu

 

Torta de Cebu is one of the most favored delicacies in Cebu.  Back in the old times, It was known to be the usual dessert for "pasalubong" here in Cebu. 

Torta is a popular baked product in Cebu and all of the Visayas region of our country. It is kind of similar to Mamon but Mamon is lighter and Cebu Torta is denser and is almost like a Pound Cake. 

The Torta has already been made available in different variations and in different tastes in various places across the country.

An example would be the Torta de Argao/ Torta from Argao (South of Cebu) where an authentic recipe from Cebu and the original recipe calls for tuba or fermented coconut wine and star anise. The tuba has a distinct aroma that makes your mouth watery, and the taste is sweet and with a hint of tangy at the same time. The Tuba actually used as their leavening agent and they wait for an hour or so to make the batter rise before baking it. And they used lard from pork oil to give the torta a savory and distinct taste.

A friend of mine, Miss Maribeth Reyes has mastered the art of baking her version of Torta de Cebu. "Betchay" as fondly called by her friends thus came to the name Betchay's Torta. 

She learned the basic recipe from “Caro and Marie”, a known baking school in Cebu twenty years ago but since her hectic schedule swept her away from her hobby, she seldom makes torta  - only for her special friends only on special occasions. But because of the pandemic and everyone needs to stay home, she was able to improvise her recipe for the yummy torta. A tastier and healthier one using vegetable oil.

With the help of her friends that were part of the taste test team’s comments and suggestions, continuous improvement was made and finally, here it is!
